Ingredients

For the ceviche:

🐟 300g of cod loin, skinned and skinless (if it has been previously frozen, the better).

🍋 Juice of 2 large lemons

🧂 Pinch of salt to taste

🧂 Pinch of ground red pepper to taste

50ml white vinegar or pickled onion liquid

✨1 tablespoon of Lemon citrus oil

 

To plate:

🧅 Purple onion or pickled onion

🌿 Coriander

Elaboration

 

1- Preparation of the cod
-Start by cutting the cod loin into small cubes. Make sure the cod is boned and skinned.
Marinate the cod: In a large bowl, add the chopped cod and cover with the juice of the two lemons. Add a little liquid from the pickled onions, a pinch of salt and ground red pepper to taste. Leave to marinate in the refrigerator for 15-20 minutes, until the cod is well cooked by the acid from the lemon.

2- Preparation of the Dressing
In a separate bowl, we will make a kind of vinaigrette with the fish liquid and our lemon citrus oil. This oil will give a unique and aromatic touch to the ceviche.

3- Plate and Serve
-Remove the marinated cod from the refrigerator and drain off excess liquid. Place the cod on a plate or serving platter.
-I fried the cod with the dressing. 
-To finish, add red or pickled onion, a little fresh coriander and seasoning to taste. This will not only give the dish a vibrant colour, but also add an extra kick of flavour.
