Many people know the classic yogurt cake, but very few have discovered the Extra Virgin Olive Oil cake. Get ready to enjoy a fluffy, flavor-packed sponge cake made with our exquisite Lemon Olive Oil.
Ingredients
🥚 5 eggs
🍋 Zest of one lemon
✨ 200g Lemon Olive Oil
🍬 250g white sugar
🌾 250g pastry flour
🥄 1 tsp baking powder
🧂 A pinch of salt
Elaboration
1. Whisk the eggs: Place all the eggs in a bowl, whisk them, and add the zest of half a lemon. Incorporamos todos los huevos a un bol, lo batimos y le añadimos la rayadura de medio limón.
2. Add the EVOO: While whisking, gradually add the oil until the mixture is smooth and homogeneous.
3. Mix the flour, sugar, and baking powder: Incorporate these dry ingredients little by little into the oil mixture to prevent lumps. Pour the smooth batter into a baking pan.
4. Preheat the oven to 160ºC (320ºF): Bake the cake for approximately 45 minutes.
5. Prepare the glaze: Mix a little milk, icing sugar, and vanilla extract.
6. Serve and decorate: The best part of this dessert is that you can decorate it to your liking. In our case, we used lemon slices, blueberries, and mint leaves.
